home cooked meal
After three nights of going out to do other things at dinnertime I finally got some real food last night! I can be a perfunctory eater at times. When I have plans to go out in the evening that don't involve dinner, I usually eat whatever quick foods are on hand as I'm running out the door. This does not usually strike me as particularly healthy or satisfying, but sometimes it has to be done. But, last night I was finally home and able to make something. I wanted something easy so I could take a break from the pace of the rest of the week. I ended up making pesto pasta with peas and chicken (and a salad). This worked out really well, and was quite satisfying. Here are the results:
I've been planning out more things that I want to make in the near future. I love planning meals and grocery shopping and all that. Yesterday I spent 35 minutes between classes thinking about all the exciting things I wanted to make, and writing a list of all my ideas. My next post will feature something other than pasta, I promise.
