Waldorf salad
Good news...no long entries for tonight because I went out for dinner and didn't take pictures. I did make something today though. The Everyday Food magazine inspired me to make something else: waldorf salad. I was actually inspired by this the other day and I got things to make it when I went to the grocery the other day. Of course, I somehow managed to forget to get apples. They are generally agreed to be essential in making waldorf salad, so I had to go out again this morning to the grocery to get the remaining ingredients. I think I subconsciously do these things to myself on purpose because I really enjoy grocery shopping, and forgetting things is always a good excuse to go back to the grocery again. But, I don't know why I like to go to the grocery so much, it wasn't always this way. I can actually probably contribute my love of grocery shopping to my best friend who let me tag along nearly every day after work when he went to the store to get things for his dinner. Shopping on my own is very different, but it was always fun going with him, so we can safely assume that it just rubbed off and influenced me forever somehow. Anyway, while I was at the grocery I also got Neosporin to put on my zested finger, flour and sugar to replace the stuff that we were running out of, more Ziplock bags (we were out), and some Glad press and seal (or whatever it is called). I've never used that stuff before, but it was on sale and I wanted to try it, and it is amazingly great, much better than saran wrap...I've been converted already. The point of all that is that I was productive while getting my apples.
So, the fun thing about the Everyday Food recipe for waldorf salad is that it uses yogurt instead of mayo. I like mayonnaise just fine, but I figured it would be nice to switch it up a little. The only bad thing was that it called for plain yogurt. I can see how this would be useful in some instances, but if I'm going to eat yogurt instead of mayo I don't want it to be gross. Therefore, I used vanilla yogurt instead of plain; this worked fine. Another food blogger who also gets Everyday Food saw this recipe also and did a taste test making one batch of the salad with the mayo and one batch with plain yogurt, she liked the mayo better...I didn't want that to be me. I enjoyed this recipe. The only other thing I changed involved the presentation. The magazine said to serve it on a boston lettuce leaf. I had boston lettuce from something else, and I was going to follow their advice, but being the rebel that I am I changed my mind at the last minute and served it over a bed of mixed greens (that included boston lettuce) instead. It was perfectly good that way and seemed healthier and more filling. Here it is:
