Strawberry inspiration
Today I was browsing some of my favorite food sites, and I came across an idea that appealed to me for a simple summer dessert. I was going to Whole Foods anyway to get some olives, and when I walked in the door my inspiration turned into destiny. Right on display at the front of the store were lovely (and large) cartons of strawberries, two cartons for $5. I couldn't resist, those strawberries were mine.
I brought them home and washed them off, then simple quartered them and dropped them into a medium bowl. I had about 4 cups of strawberries, and when I added 1 cup of White Balsamic Raspberry Vinegar and put it all into the refrigerator to sit, my dessert was as good as done. I'd never tried strawberries in balsamic vinegar before, but I knew it had been done, so I was eager to try it for myself. The ratio suggested on another website said to use 1/4 cup of vinegar per cup of strawberries, so that can be useful when you're not making 4 cups worth.
A few hours later after dinner, I pulled out my strawberries and some vanilla ice cream and started serving it up for everyone to try. My little brother, who is no fan of vinegar, took one bite and asked me what the sauce was. I asked him to guess, he guessed vinegar, I nodded, and he proceeded to eat all of his dessert and scrape the bowl clean. I couldn't believe it, my own brother eating strawberries soaked in vinegar, but it was that good. I still have the second carton of strawberries, and I'm debating what to do with them, I'm very tempted to go ahead and soak them as well.
