Cauliflower soup in the summertime!
Tonight for dinner I had a strange craving (strange for summer anyway). I decided I wanted to make cauliflower soup. I don't really think of myself as a big soup eater to begin with, but I do have some favorites and I eat those willingly. I'd never made cauliflower soup before, but I was determined to try it. I used a recipe from epicurious.com but altered it based on some comments at the end of the recipe. I thought it really turned out well, I couldn't stop eating it. And I will have the leftovers for lunch tomorrow. It's a flexible soup too because I had my first bowl with a little nutmeg, and some freshly ground pepper, but the second bowl I added bacon, and that wad really good as well. Here is a picture of my first bowl, it doesn't look like much, but it really was good.
I wish I had taken a picture before I mixed everything together because then you really could see the substance and different colors and textures of everything that makes this soup so tasty. But, I recommend this soup, especially when it actually becomes hot soup weather (which is probably still a ways off).

I'll have to try this one. I love cauliflower soup. I have a recipe from this soup cookbook for a cauliflower soup which is my favorite so far, and you make these little parmesan crisps to go on top. It is actually suprisingly light and great for lunch, or with a salad or something for dinner. Don't you just love cauliflower!
You really should try my cauliflower cilantro "rice." It was awesome....I knew I had to do something with all of that cilantro :D
