Pulled pork dinner
After being inspired by my sister who was inspired by me, I decided to make pulled pork for dinner tonight. I made it the same way I did last time, using a dry rub, cooking it in the oven for 3 hours at 325 and adding BBQ sauce on at the end. To go with it I made my own coleslaw this time with cabbage, carrots, and red onion, and I had baked beans and applesauce as well. It tasted southern to me, it was a good meal. Jon and I were the only ones eating it, but there were surprisingly few leftovers when we were done. In our defense, this one was slightly smaller than the last one I made, so there was bound to be less left. This has quickly become a family favorite since it is so easy, versatile, and tasty.

Well, I am flattered to know that you were inspired by me, even if I was inspired by you. I still have some leftovers even though I made it a few nights ago (the smallest piece I could find to cook was just under 6 pounds......and for 2 people....go figure) But am loving it. I know it sounds weird that it is "quick and easy" to make because it takes a couple hours......but it really is easy! You just put the rub on it, cover it, and stick it in the oven. And BAM! come back later and it's perfect! It is amazing how great the leftovers are, and they take mere seconds to reheat. Definitely a keeper.
Most people make theirs really vinegary, but since I made my own, I was able to put more molasses in, so it was perfect. And Erin, you should be proud to know that I put dried mustard in my rub, on my own accord.
We really should have a barbeque. YUM!
