Veal Parmigiana

Tonight I decided to make veal parmigiana for dinner. I got a nice piece of veal scallopini from the grocery yesterday and I was convinced I could make something remotely similar to the veal parmigiana I had last weekend at Piebar. I didn't follow the recipe exactly because I was only making veal for one, and I used sauce from a jar instead of making the one they give instructions for. Breading the veal is a little messy, but it's worth the effort. Dad and Jon both looked longingly at my dinner and enjoyed the samples that I gave them. I didn't know if they liked veal or not, so I hadn't planned on cooking any for them. Jon even though the veal was fish at first (and he doesn't like fish). But, I enjoyed this with a salad and I was pleased with the results and the recipe. Here's dinner:


It seemed pretty simple, but it was all I needed tonight. I'll definitely be making it again sometime for everyone.
