Thursday night's dinner was one of the first nights all week that I had time to cook. Since Dad bought a roast earlier in the week and we had yet to eat it, I decided to make that. We had a roast classic style with green beans almondine and potatoes. For dessert, I decided at the last minute that I wanted to make a chocolate pie with Mom's recipe. As luck would have it, I had the recipe and all the ingredients to make it - yay! So, everything turned out well, including the pie (which I had never made on my own before). It was so well received by myself and the others, that it was already almost half gone before I had a chance to take a picture. But, here it is anyway:
I was very pleased with the results.
I was a little thrown by the recipe at first though, so I'm going to reproduce it with detailed instructions for further reference.
Mom's Chocolate Pie
1 unbaked pie crust
1 stick butter, melted and cooled
1 1/2 cups granulated sugar
1/4 cup cocoa
1/3 cup all purpose flour
1/3 cup hot water
3 eggs, separated, slightly beaten
1 tsp. vanilla
Preheat oven to 350.
Melt the cocoa in hot water, stirring until smooth - allow to cool.
Mix sugar and flour together, set aside.
In a bowl add eggs one at a time to cooled butter, whisking gently after each addition, then add vanilla. Add sugar and flour mixture, stirring until just incorporated, careful not to over-mix. Stir in chocolate mixture and pour into pie crust.
Bake at 350 for 25-30 minutes, or until set in center. Allow to cool 5 minutes before cutting.
