All fresh with fish

OK, remember how I went to the grocery earlier? I was in the mood for fish. The store had good looking fish. You do the math. Really though, this all worked out very well. I bought a tilapia filet for and quick and easy fix to my fish craving. To go with it I intended to use the spinach I had sitting at home waiting to be used. For variety, I also decided I would a fresh mango salsa. At this point I must admit that I've never really made salsa before and I hadn't looked up a recipe for what I was doing. As usual, that didn't stop me, I got an onion, a mango that was shockingly good and ripe (but I didn't know that until later) and two ripe tomatoes. What I failed to get was cilantro. It was a tragic oversight, but I pressed on. So, skip ahead to dinner. Before I started making up my salsa I did look up a recipe just to see if there was anything in particular I should throw in, that's when I remembered the cilantro. I was deeply disappointed and unsure of what I could use in its place when I noticed that we had some dried cilantro leaves in the spice cabinet. I realize that dried cilantro pales in comparison to its fresh counterpart and Max would have glared disapprovingly and never used it, but I wanted something green in my salsa, so I went ahead and used it. I guess this is also a good time to point out that there were no peppers in my salsa, I didn't forget them, I just didn't want them, so there. After chopping everything up (I finally figured out how to cut the mango the way I've always read about!!) I put it all in the bowl together and added salt and lime juice. For the tilapia, I cooked it butter with salt, pepper, and lemon juice and just put it on the spinach (which I didn't bother to wilt ahead of time). The warm fish did wilt some of the spinach, but I liked having it mixed like that. The mango salsa went on top, and it was all really good. Honestly better than I expected, which was a good thing because the other dish I made did not meet my expectations, but more on that in the next post.
