Late leftover breakfast

This morning I made a late breakfast out of things I had sitting in the refrigerator waiting to being eaten. I had the perfect ingredients to make a frittata (basically an Italian omelet) using my leftovers, so that's what I did. It had 4 egg whites (leftover from ice cream making), 2 whole eggs, fresh corn, zucchini, and caramelized onion. On top there was also leftover romano cheese. I like making frittatas because it is easy and delicious and you only need one pan. I started the onions first, added the zucchini and cooked until both were soft. Then all I had to do was toss in the corn and pour the eggs on top to spread over the mixture. Once the eggs are mostly set (especially on the sides) it just goes under the broiler with the cheese on top until it's browned and set in the center. How much easier could it be? I also had some leftover pork which I sliced and warmed up to eat along with it. Molto bene!
