Independence Day - Italian style
Since my other meal planned for today was eaten last night I had to improvise for my own feasting today. That wasn't difficult though, because in the refrigerator we had fresh pizza dough from the Publix bakery. It was just in there waiting to be rolled out and turned into two delicious pizzas, and since we still had some fresh topping options, I had to oblige. I made a traditional margherita pizza and a meat lovers pizza with caramelized red onions. The margherita pizza had all the normal ingredients, mozzarella, tomatoes, and basil. It was simple and delicious with a fresh flavor.
For those unfamiliar with the pizza making process, it is quite simple. Spread the dough to the desired shape and thickness, drizzle/brush with olive oil, put a base topping of cheese and then add the other toppings. Of course, if you must have tomato sauce or pesto on the bottom, that goes before the cheese. That's it. We just cooked it in a 400 degree oven for 10 minutes, or until reached desired doneness. When it's done, it looks like this:
The meat lovers pizza had caramelized red onions, mixed cheeses, hamburger, bacon, and pancetta. They were both very good with very different tastes.
For dessert I had more of the watermelon sorbet, but this time I added blueberries to make it more festive and patriotic. It's good stuff.
