Two meals, one day

I actually photographed my breakfast and dinner today, it's a miracle! For breakfast I made sort of mini quiches. The idea came from Rachel Ray when I was browsing the Food Network site. Her recipe can be found here. I didn't follow it exactly, but it at least gives the general concept and you can do what you want with it, as I did. First the picture:

I made three different types. There was one with spinach and cheese, one with ham, broccoli, and cheese, and a final one with bacon and cheese. I enjoyed them, and they were fun to make. The bacon ones were probably my favorite, but the ones with green things in them were good too, just not as flavorful in the first batch (I did much better on the second set).

For dinner I made something that I've made and documented before. It was the chicken with tomato, bacon, and thyme (for that recipe go here).

For dessert I had something that didn't photograph especially well, but it tasted good. Again, do I ever follow recipes? Not really, but here is this recipe anyway. If you're not impressed by my picture then you should really go check hers out, it looks fantastic. My texture wasn't exactly the same as hers, but mine is still good, and I've found that I like silken tofu (who knew?) Anyway, this dessert is a spiked chocolate mousse. Part of the problem might have been that my hand mixer died right when I was ready to use it. It was just working earlier today, but something happened between the two uses (sabotage?) and it stopped working all of the sudden. Fortunately I have my trusty standing mixer which I used instead, but by the time I got everything transfered to that bowl the temperature of my ingredients had changed, so that could have had an effect on what I was doing. I don't know, but still, I enjoyed this dessert.

Aha! you found the tofu! Was it where I told you then? Looks pretty good to me. Did it taste tofu-ish at all? Interesting.....I had been worried you might have a pot de creme incident like we had before, but this looks yummy.

Mini quiches and chicken look great. I made a killer quiche the other day. I'm not a huge quiche fan, but this one was delicious! I'll have to find the recipe for you.

No no, not pot de creme-ish at all. There was no silken tofu at Kroger, but Sevenanda had some! This one was good. Not tofu-ish at all, in fact, it didn't smell bad (maybe that tofu you had wasn't fresh to begin with?) Dad and Jon both knew this had tofu, tried it anyway, and both liked it (Dad especially, Jon said it was really chocolately - because it is). Dad couldn't even believe that it was low carb. Anyway, yum yum!
Find that quiche recipe and send it along.
