orange treats

Last night when I was making my salmon dinner I was also making a dessert. I wanted to use my new ramekins cups given to me by Mom, I wanted to try mascarpone cheese, and I wanted to make an Italian dessert. I accomplished all three of these goals with the recipe for fresh orange tiramisu from the May issue of Bon Appetit. I couldn't eat the dessert last night though because it had to sit in the refrigerator for at least three hours once it was assembled. That was fine because I had it for dessert tonight. Dad and Jon split the other one and it was all gone within a few minutes. Before it was devoured, I took a picture:

I really liked the way it turned out, I would make it again. It was both tart and sweet, and a nice light treat to end the evening.
The other thing I made today was for breakfast. I had some leftover mascarpone mixture from my dessert-making last night and I decided to put it to good use along with some left-over orange syrup and a few fruity things I had waiting for a purpose in the fridge. I made a parfait with rhubarb compote, strawberries, pineapple, pecans, Fiber One cereal, the orange syrup, and the mascarpone mixture, it was really good, and a fun treat for Sunday breakfast.
