dinner and breakfast
I thought I should document my meals from last night and this morning while I had a chance and while the internet is working (it was out this morning). Since I've been in NC I've had the chance to acquire some new cooking tools. I haven't had time to use them yet, but rest assured they will be making an appearance in the future.
OK, so first things first. Dinner last night was satisfying. We had tilapia with lemon, sauteed chard, rice pilaf, and roasted vegetables (consisting of carrots, parsnips, beets, sweet potatoes, and apples) with rosemary. Yum yum. I like tilapia. It is a mild fish, it cooks quickly, and it is not too expensive. Also, it is a lighter, healthier source of protein. And, the final thing I like about tilapia is that it's not chicken, I've had enough of that for a few days. So, this was dinner:
For breakfast I made a fruit salad to go with my yogurt. We have an interesting collection of fruit after a few trips to the grocery, so here is what I had:
As you can probably see, we have kiwi, grapes, bananas, mango, and blood oranges. This blood orange was much prettier than the one the other day, I really enjoyed peeling it apart. This was a good breakfast to start the day. I have yet to figure out what we are having for dinner though, and seeing as how we will need to be starting it relatively soon I should probably get to it.
