dinner trickery
Well, I can't get too far behind or I'll never catch up. So, I have an update for last night. After finishing my last post I went over to the Amateur Gourmet website and read an entry by Adam about pesto pasta and peas. I read the entry and looked at the recipe and pictures from when he'd made it before and decided I just had to do it. I have the Barefoot Contessa Parties book as well, but since it is not with me in NC, I found it very useful to have Adam's repost of the recipe.
I will admit that I did not have time to go to the grocery and didn't have all the ingredients to make homemade pesto, but much to my surprise I did find all the other necessary ingredients after raiding the pantry and freezer. I used premade pesto and left out pine nuts and bowtie pasta (since I didn't have those things), but for everything else I followed the directions, making a slightly smaller portion that the recipe made. Look at this:
Personally, I thought it turned out really well. I've always liked pesto pasta, but I thought the addition of spinach and peas was a nice touch. Also, Mom and Emily seemed to enjoy the pasta as well. This was especially exciting to me because I tricked my sister into eating mayonnaise and liking it! She does not know this yet, so if you are reading this now Emily, I'm sorry for tricking you. She asked me if I was making a pesto cream sauce, I said yes. Mayo is close enough to cream, and I used it since that was what the recipe called for, but Emily does not like mayo because she thinks it tastes bad. She liked it just fine in this recipe though, so maybe she will learn that it is OK to mix it with things in recipes and she won't be so prejudiced against it. I figure it is OK to tell her this now because we already finished off the leftovers for lunch today, so she won't have any reason to boycott leftovers now that she knows.
For dessert I made peach and blueberry cobbler with the same streusel topping from the berry pie the other day. It wasn't my favorite dessert so far, but I still enjoyed it.
