Caribbean meals
Little did I know when I posted my last entry that it would be so long before I got another one up. I also did not realize at that point that the salmon risotto meal would be the last meal ever cooked by members of our family in Mom's house in Candler, NC. So, farewell to that last documented meal, it was a nice sendoff. Now, down to business...
Caribbean food (at least on St. Croix) is pretty good. I did not document all my meals on the trip, but I did document some of them, and that's what you're about to see. First of all, there was happy hour, a wonderful time of day where drinks such as these could be procured at half price.
I was especially fond of the piƱa coladas. Those along with the wonderful quesadillas which were filled with tomatoes, black beans, corn, and cheese were my favorite food staples on the trip. The quesadillas also came with fresh guacamole and salsa, and that made them all the better. Here is a picture of one of many plates of quesadillas taken at night:
One of my other personal favorites from the restaurant at the resort was the duck. I love duck anyway, so this was an obvious winner. I also really liked the vegetables, though there weren't many of them.
The only other food I documented at the hotel was the pirates buffet we had one night.
This was chicken, really good mixed steamed vegetables, a sweet potato mixture, some delicious macaroni and cheese, great shrimp with cocktail sauce, and some type of white fish which I have never had before so I cannot identify. After that there was a fruit and salad plate. This one was complete with various normal things which were all quite good, and then there was a starfruit. Star fruit comes from the carambola tree, and carambola was the name of the resort we were staying at, so it all ties in.
After that, I am sad to admit, there was dessert. The best thing that night was the key-lime pie, but the german chocolate cake earned an honorable mention as well.
Now, the only other thing I have a picture of are the buttermilk pancakes with mango pieces that I had for breakfast at this place called Off The Wall. They were good pancakes, and mangoes are good with many things.
