Serendipity in the kitchen

I'm incredibly far behind on my food blogging, but I desperately want to catch up! As frequent website checkers may have noticed, I've been back-dating my entries to coincide with when they actually happened, and I'm going to continue using that technique until I'm caught up. So, down to business...

Today (that being today, June 30th, which has long since passed us by) I made a dinner that I really enjoyed. I went to the grocery and had a fish craving. I decided to handle that by getting salmon and shrimp and thus having the option to make either one for dinner. I also got some more puff pastry with the idea that I would use it to wrap up the salmon as I believe I saw on one of the food network shows. When I went looking for recipes I found this: salmon in puff pastry with spinach. Did that sound like a good idea? Absolutely! I was sold. I had considered making peas and a béchamel sauce for lack of other ideas, but when I saw this combination it sounded perfect to use up thing I had on hand and to go with my salmon meal. So, first there was the spinach with mozzarella. This dish was simple and tasty and I made it in one of the new pots that Mom and Emily gave me for my birthday.

While I was preparing that I thawed my puff pastry a little so I could wrap it around the salmon. When I did that it was huge, I could not believe how big the piece was going to be. I could have easily shared it, but I was only making dinner for myself, oh well. Before making the "my salmon is huge" discovery I made some low carb potatoes. They are sunlight brand potatoes and they taste normal, are naturally low in carbs, and are very good; I love them! Now, after everything was cooked and ready to eat I cut my salmon log in half and prepared to enjoy. But, I was completely unprepared for what I experienced. All the food was good, but the salmon was heavenly! The fish was fresh and cooked to flaky, moist perfection, and the puff pastry made an amazing shell! It was crisp and flaky on the outside and moist and buttery on the inside (and there was no butter added, just for the record). I hadn't realized that puff pastry made like that tastes like a croissant, it was very different from my dessert the other night. I was really surprised by how good it was, but I certainly enjoyed it, and was happy to have the other half for lunch the next day.

Now, since I didn't eat the whole salmon I still had room for dessert, and thank goodness, because I made an interesting one. I found this recipe for an Apple-Fig Crisp. So, I made that and served it with my homemade cherry ice cream. Do I even need to say how good this was? What a combination! It was heaven in a bowl, I loved how the fruits all went together. I made it to use up my leftover figs, and I ended up having to go buy two apples from the Candler Park Market because we were all out, but it was delicious. I didn't make a full recipe because I was just trying to keep it small and use the leftovers, but it worked out perfectly, it was really just right, and a lovely ending to my surprising meal.
