Light day

Today was another day for experimentation and light eating at dinner. But first, I made something exciting after lunch (hence the need for a light dinner). I made my favorite chilled melon soup, made famous during the workshops when I made it for the first time and it was a hit. There is no recipe for this one because I made it up back then based on some other chilled fruit soup recipes I found. For this one I took one honeydew melon and one cantaloupe and used my brand new melon baller to remove all the meaty insides. After that is done, the creative part comes in. I just get out the blender and some basic ingredients and start mixing. I put some mixed melon in with vanilla yogurt, orange juice, fresh mint leaves, and maple syrup. I use all those ingredients and mix it up to taste and the consistency that I want. And, it takes a few mixes in the blender, so if one has too much yogurt, then the next one has more OJ, and when they mix together it all balances out. After I'm done with all the blending I take some of the leftover whole melon pieces and put them in when I serve for extra texture. This was the end result:


For dinner I made a few dips/spreads and ate them with toasted pita bread brushed with olive oil. First is the tabouleh (which was actually store bought).

Then I made the artichoke dip again that I made for the party last week.

Finally there was homemade hummus with pine nuts on top.

I have to say, although these were all good, the artichoke dip was still my favorite. It is a winning recipe.
