Home cooking

I've made two things worth mentioning since I got home from St. Croix. The first was the other night to go with barbecue chicken that Dad was making. I purchased some cherries at the grocery because they looked fresh and I thought they would be good for dessert. As soon as I got home I had another idea; cherry ice cream! Sure enough, there were recipes to be had online. I went with this one:

Cherry and chocolate ice cream recipe
1/4 cup chocolate shaving
1/4 cup fresh cherries, pitted and halved
2 large eggs
3/4 cup sugar
2 cups heavy cream
1 cup milk

Place the chocolate shaving and the cherries in separate bowls. Cover and refrigerate. Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Add the sugar, a little at a time, then continue whisking until completely blended. Pour in the cream and milk and whisk to blend. Transfer the mixture to an ice cream maker and freeze following the manufacturers instructions.

Just before the ice cream is done, add the chocolate and the cherries, then continue freezing until the ice cream is ready.

Whether you think this picture looks good or not, the ice cream certainly was. It's all gone already, and I'm thinking about making some more because I still have plenty of cherries.

My other food item is what I had for lunch today Heroin Wings. This recipe was adapted from 500 Low-Carb Recipes by Dana Carpender. I used what I had, changing the recipe slightly...here is what I did:

8 chicken drumsticks, washed and patted dry
3/4 cup grated parmesan cheese
1 tablespoon dried oregano
1 tablespoon tarragon*
1 tablespoon cilantro*
2 teaspoons paprika
1 teaspoon salt
1/2 teaspoon pepper
3/4 stick of butter

*the recipe called for 2 tablespoons of dried parsley, which I did not have, so the above was my substitute, and I found it to be just fine

You preheat the oven to 350. Combine the dry ingredients in a bowl. Melt the butter in a shallow bowl (I did this in the microwave). Line a shallow baking pan with foil (very important if you don't want to be scrubbing the pan later). Dip each drumstick in butter, roll it in the seasoning mixture, and arrange in in the pan. Finally, you bake for one hour and then let cool enough to eat and enjoy! Very easy and delicious.
