Roast beef dinner

Since Dad is still gone I was responsible for dinner again tonight. He bought a roast before he left, so I needed to cook it before it was too late. I did that tonight when I made our classic roast beef dinner. It consisted of the roast with au jus, roasted rosemary potatoes, and green beans with sauteed onions and bacon. Everything came out really well. I love making this dinner on easy nights because it cooks itself in the oven and all I have to do is but it up and put it out. I would also like to note that I carved the roast like a pro! Dad never lets me carve because he is a nutcase, but my experience tonight proved that I am perfectly capable of carving it thinly the way he likes it.
