Fun with family
Tonight we had my aunt and uncle (Ethel and Henry) over for dinner. We had this authentic Indian curry that came from the mother of a friend, and we wanted to use it to make a chicken curry dish. In the end we made two dishes, one spicy and the other not as spicy with the addition of coconut milk. We just took the curry base, mixed in a can of tomato sauce and heated it up, adding lime, sugar, and a little butter in the end. We had more zucchini fries and some cauliflower cooked like rice to go with it. The zucchini fries were so popular the night before that we just had to have them again, even my uncle Henry (who complained loudly about the prospect of eating vegetables) liked them and took a nice big scoop of zucchini for his plate. This is what the not-as-spicy version looked like:
Ethel and Henry also brought a nice Valserrano red wine. We didn't have wine glasses, but you can see we made do anyway.
For dessert we made individual cheesecakes following the recipe on the back of a box of unflavored Knox jello. We made a pecan crust and whipped the little cheesecakes up in a flash. Since they were made with jello instead of eggs they didn't have to be baked, and just went straight into the refrigerator instead where they chilled quickly with the help of the "super chill" feature (much like "power boil," but with the opposite effect...apparently every appliance in their kitchen has super powers)
The cheesecakes were a fun way to end the meal and some people really liked theirs. Henry snapped this pictures of his empty cheesecake bowl after thoroughly enjoying the former contents:
