Dancing with the devil good

There's something about going to a great concert that makes you want to do things you've never done before (this is my experience anyway, so play along). To fill that need for a new experience I decided to make pulled pork today. This is something I've been wanting to do for quite some time now, and I hadn't gotten around to it yet. Feeling energized from the concert, I got up this morning and looked up a recipe before heading out to the grocery to buy some nice pork shoulder to bring home. The recipe I chose was an easy one. Take the pork (mine was 4.5 lbs.) and rub it with a dry rub (of course they actually had a recipe, but I already had one made up and I just used that, it was easy that way) then just put it in a roasting pan, cover it tightly with aluminum foil, and pop it in a 325 oven for about 4 hours or until it reaches an internal temperature of 170 F. I was all for it, I put it in the oven at 2 and came back around 6 to assemble everything else for a late lunch/early dinner, picnic-style meal. The pork was cooked to perfection, really tender and juicy. It came right apart with the forks and shredded up easily to a nice consistency. We topped it with BBQ sauce from a bottle because I wasn't interested in making one up tonight even though I had a recipe for that too. Anyway, the sauce was good, here it is looking authentic and saucy:

To go with the pork I made coleslaw and cornbread. There were plenty of other options that came to mind, but I wanted to do something good and easy. So, my two sides fit the bill, and no one was complaining about a lack of food or variety. I may not have smoked it for that rich BBQ flavor, but the flavor and quality was not lacking. Anyway it seemed like a southern thing to be eating, and we had fun.

This picture didn't have the sauce in it yet, but the sauce came shortly after, and we declared the meal finger-licking good, or dancing-with-the-devil good (for those of us who danced happily for Ray LaMontagne last night). A wonderful concert, and a delicious meal...what more could we ask for?
