Fish night

Tonight Jon was going out to a game, so I was on my own for dinner. I decided to celebrate by making things that he would never eat. The given for nights like this is fish since Dad and Jon both hate it. I made tilapia with lemon and butter, really simple and fast. To go with it I steamed some eggplant and added honey (to make honeyed eggplant). I also cooked some sweet potatoes and mashed them up with butter, pecans, brown sugar, and a splash of tequila. It was a fun dinner to make and eat, there's no need to suffer when I eat alone.
