Breakfast x2

Since I've been in NC we've had a relaxed eating schedule that involves getting up late and therefore not having breakfast until closer to lunch time. That means that we are then hungry for lunch later in the afternoon and have dinner later too. But really the late breakfast is the only thing that gets interesting. Yesterday in particular I decided that I wanted a salad for breakfast with a poached egg on top. So, it was sort of breakfast food and sort of lunch food. I saw Wolfgang Puck make a salad like that on his egg cooking show the other day, so I decided to follow his lead. I made my own oil and vinegar dressing, used mixed greens, and added bacon and a poached egg. The egg was poached in the newly-learned poaching method that involves putting vinegar and salt in simmering water and dropping the egg in for a few (3) minutes. It was my first time trying this, and I thought it worked pretty well, the egg did come out looking more like a restaurant poached egg with the white wrapped neatly around the yolk with the help of the vinegar. This was the end result:



The second breakfast was this morning when I made "Eggs Merit House" from one of the various low-carb cookbooks laying open in the kitchen. This was easy and quite enjoyable. It also seems a little scandalous, but it was really good anyway. You take a shallow dish and grease the bottom with oil (I used olive oil). Then just just crack two eggs into the dish and put a little bit of cream on both sides. On top of that you put one thin slice of ham and some cheddar cheese on top of the ham. Then it goes in the oven for 10 minutes. How easy is that? I also put some salt and pepper on top of the eggs before I put the ham on, and I thought that was a good thing to do too. Anyway, it made for a quick and tasty breakfast, very satisfying.
